Danish Aebleskivers

2 cups flour
1/2 tsp salt
2 tsp baking powder
1 Tbs sugar
2 Tbs melted margerine
2 cups milk
2 eggs, separated

Mix together dry ingredients and set aside. Separate eggs and beat egg whites stiff, not dry. Combine milk, egg yolks and margerine; add to dry ingredients. Fold in beaten egg whites.

Use a heavy cast iron aebleskiver pan on medium heat. Put approximately 1 tsp oil in each hole. Pour batter in each indentation to level top. Use a thin knitting needle (or skewer) to turn, starting when bubbles appear. Continue turning to complete the ball. To test for doneness, insert needle, it will come out clean. Baking time: approximately 7-9 minutes.
