Oatmeal Cookies

1 cup (2 sticks) unsalted butter

1 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
2 teaspoons vanilla extract
1 2/3 cups all-purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon baking powder
1/8 teaspoon ground nutmeg
1 1/2 cups quick cooking oats

Preheat oven to 350 degrees F. Line 2 large baking sheets with parchment paper; set aside.
In a large bowl with an electric mixer, beat butter and both sugars until fluffy. Mix in egg and vanilla until well blended. Combine flour, cinnamon, baking soda, salt, baking powder and nutmeg in a bowl. Stir into butter mixture.  Gently stir in oats until well blended.
Shape dough into balls.  Flatten with the bottom of a measuring cup dipped in sugar.
Bake for 8-10 minutes. Let cool on baking sheet 5 minutes before removing to a wire rack to cool completely.

Chicken Roll-Ups

8 oz cream cheese
2 Tbs melted butter
1/4 tsp salt
1/8 tsp pepper
2 tbs milk
1 Tbs chopped green onion
2 cups chicken
8 oz crescent rolls
3/4 crushed cornflakes or breadcrumbs

Mix cream cheese, 1 Tbs butter and rest of ingredients through chicken. Spoon mixture into crescent rolls, roll in other Tbs butter, coat in cornflakes or breadcrumbs and bake at 350 for 20-25 minutes.


Crock Pot Chicken Parmigiana

Mix together 1 egg, ¼ tsp salt and ¼ tsp pepper. Coat 4-6 chicken breasts in egg mixture and dip in Italian bread crumbs. Brown in buttered pan.

Pour one can/bottle of pizza sauce into crock pot. Place browned chicken in crock pot. Bake 4-6 hours on low or 3-5 on high.

Before serving place mozzarella slice on each chicken breast and cook for 10 minutes more. Serve with spaghetti.
