Italian Chicken

4-6 chicken breasts
4-5 roma tomatoes, chopped
1 small jar artichoke hearts, drained
1 red pepper, diced
2 cloves garlic, minced
2 Tbs olive oil
1 tsp sugar
salt and pepper, to season
2 Tbs flour
1/2 cup mozzarella 
fresh basil

Combine tomatoes, artichoke hearts, red pepper, garlic, olive oil, sugar, salt and pepper in a bowl.  Then toss with flour.  Place chicken in 9x13 pan and place vegetable mixture over chicken.  Bake in 350 degree oven until chicken is just about done.  A few minutes before the chicken is done, sprinkle mozzarella on top of chicken and place under the broiler for a few minutes until cheese is bubbly and vegetables are caramelized.  Take out of the oven and sprinkle with fresh basil; serve over fresh pasta.
